In a large bowl, add the flour, instant oats, old fashioned baking soda, baking powder, and salt. Mix to combine, then set aside.
In a separate bowl, cream together butter and sugars. Slowly beat in the eggs, one a time, until combined. Then mix in the maple syrup and vanilla extract.
Slowly add the dry ingredients into the creamed butter mixture and mix to combine. Then fold in the chocolate chips.
The cookie dough will be thick and sticky. Chill the dough for 3 minutes in the refrigerator.
Using a spoon or cookie scoop (like this one), take 1 1/2 tbsp of cookie dough and evenly place them on the prepared cookie sheets, 2 inch apart.
