Get cozy with a cup of homemade Starbucks pistachio latte! This copycat recipe combines the nutty flavors of sweet pistachio, salted brown butter, brewed espresso, and steamed milk - making it the perfect drink to sip hot, or make into iced pistachio latte! Move over Starbucks, there's a new barista in town!
Boil for 7-10 minutes, or until the sugar has dissolved completely and the mixture has reduced to a thick syrup consistency.
Turn off the heat and remove the saucepan from the stove. Allow the pistachio syrup to cool for 5-10 minutes, then strain out all the remaining pistachio pieces with a fine-mesh strainer.
Transfer the homemade pistachio syrup in an airtight jar and store in the refrigerator for up to 2 weeks.
Make the Pistachio Latte
Heat a small saucepan over medium heat. Once hot, add in the butter and stir until slightly browned, but not burned. Stir in the brown sugar until combined, then remove from heat to cool and set aside.
Meanwhile, heat the milk until hot using a milk steamer. If you don't have a steamer, you can heat the milk over stovetop or in the microwave. Pour the hot milk into a large cup.
Pour in the brewed espresso, homemade pistachio syrup (adjust amount to taste), and top with the browned butter-sugar mixture. Optionally, you can garnish with a sprinkle of chopped pistachios on top. ENJOY!
