These Fresh Strawberry Oat Bars are a healthier take on granola bars that sure makes for the perfect snack, breakfast, or dessert! Made with fresh strawberries, whole grains, nuts, and a lightly sweetened almond glaze, this recipe is sure to please even the pickiest eaters! Gluten-free, dairy-free, and vegan.

For the almond glaze:


  • Preheat oven to 350 degrees. Lightly grease an 8 x 8 baking pan with coconut oil, or line with parchment paper.
  • In a medium bowl, add oats, almond flour, coconut oil, maple syrup, coconut sugar, and chia seeds. Mix until combined.
  • Using a spatula, transfer the oat mixture into the prepared pan and press firmly until batter is packed to the bottom of the pan.
  • Spread the strawberry jam over the crust until it is evenly coated. Then layer with sliced strawberries and almonds.
  • Bake strawberry bars for 30 minutes. Meanwhile, make the almond glaze by adding the powdered sugar, almond extract, and milk into a small bowl. Whisk until fully combined.
  • Remove the oat bars from the oven and pour the almond glaze on the bars. Bake for an additional 5 minutes.
  • Let cool before serving, then cut into 8 squares. ENJOY!
