Easy Caprese Toast with Pan-Roasted Tomatoes, Basil, and Mozzarella (V)

This crowd-favorite Easy Caprese Toast features crunchy edges, pillowy texture, and a flavor-bursting combination of pan-roasted cherry tomatoes, fresh basil, and mozzarella. A great breakfast and snack option for anytime of the year! Vegetarian.
1tbspfresh mozzarella cheese, shredded into ½-1 inch bits
⅓cupfresh basil leaves, roughly torn
Instructions
Heat 1 tbsp olive oil into a large pan over medium heat. Add cherry tomatoes cut side down. Cook for one minute and flip. Season with salt and pepper, then cook for another minute. The tomatoes should be juicy, tender, and slightly charred.
Drizzle the remaining olive oil evenly over each slice of toasted sourdough. Then layer the pan-roasted cherry tomatoes and shredded mozzarella. Top with fresh basil. ENJOY!
