Delicious Roasted Lamb Breast Recipe with Herbed Potatoes

You've cooked lamb chops, you've eaten lamb shanks - but have you tried lamb breast? This juicy Roasted Lamb Breast Recipe is so flavorful and oh so delicious! And did we mention it also comes with a side of crispy herbed potatoes? Gluten-free, dairy-free, and paleo-friendly.
Preheat oven to 325 degrees F. Lightly coat a cast-iron skillet with 1 tbsp olive oil.
In a small bowl, add the herbed potato seasonings: 2 tbsp olive oil, Italian seasoning, garlic, salt, and pepper. Mix until well-combined.
Coat the potatoes with the herb mixture, then place on the prepared cast-iron skillet.
In another small bowl, add the lamb breast seasonings: 1 tbsp olive oil, minced garlic, salt, pepper, paprika, cumin, Italian seasoning, lemon juice, and maple syrup. Mix until well-combined.
Generously rub each lamb breast with the spice mixture. Then transfer the lamb breast on top of the potatoes to the prepared cast iron skillet. Cover the pan with foil, then bake in the oven until the meat is tender and cooked through, about 1.5 hours.
Remove lamb from the oven and slice into pieces. Toss the lamb slices around in the pan until coated with the drippings, then place the skillet back in the oven. Broil on high for an additional 1-2 minutes.
Remove from oven. Serve roasted lamb breast with the herbed potatoes. ENJOY!
