Jollibee Chicken Joy Recipe (Crispy Filipino-Style Chicken)

Ingredients
For the Chicken Marinade:
- 2 lbs chicken drumsticks and thighs
- 1 cup buttermilk
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
For the Breading:
- 1½ cups all-purpose flour
- ½ cup cornstarch
- 1 tsp baking powder
- 1 tsp paprika
- 1 tsp salt
- ½ tsp pepper
- ½ tsp garlic powder
- ½ tsp onion powder
- Oil for frying
For the Gravy:
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1 cup chicken broth
- ½ tsp soy sauce
- Salt and pepper, to taste
Instructions
Marinate the Chicken
- In a large bowl, mix buttermilk, salt, pepper, and garlic powder.
- Add chicken pieces and coat well. Cover and marinate in the fridge for at least 4 hours or overnight.
Prepare the Breading
- In a shallow bowl, combine all dry breading ingredients.
Bread the Chicken
- Remove chicken from the marinade, letting excess drip off.
- Coat each piece thoroughly in the flour mixture.
- Place breaded chicken on a wire rack to rest for 15 minutes.
Fry
- Heat oil in a deep skillet to 350°F (175°C).
- Fry chicken in batches for 12-15 minutes, until golden brown and internal temp reaches 165°F (74°C).
- Drain on paper towels.
Make the Gravy
- Melt butter in a saucepan over medium heat.
- Stir in flour and cook until light brown.
- Gradually whisk in broth and soy sauce. Simmer until thickened.
- Season with salt and pepper.
