Pan-Seared Bison Steak with Garlic Butter Sauce and Crispy Baby Potatoes

This fantastic Bison Steak Recipe is my go-to recipe for hosting dinner parties. It's incredibly easy to make but tastes SO delicious - no one will ever guess how easy it is to make! First, we pan-sear New York Strip bison steaks and pair them with a delicious garlic butter herb sauce and a side of crispy baby potatoes. What's not to love?
In a small bowl, mix together the Galic Butter Herb Sauce ingredients with a whisk until well-combined. Set aside.
In a large cast iron skillet, heat 2 tablespoons olive oil on medium-high heat. Once hot, add in the baby potatoes, garlic, thyme, and oregano. Cook for 3-4 minutes, then give it a good stir using a wooden spoon. Cook until the potatoes are tender, about 3-4 more minutes. Transfer the potatoes to a plate and set aside.
Using the same skillet, heat olive oil on high heat. Lightly season the bison steaks with salt and pepper, then add the steaks to the skillet. Cook each side for approximately 3 minutes until the outside is seared and browned.
Reduce the heat to medium-high, and continue to cook until the bison steaks are cooked to your preferred doneness (I recommend medium or medium well). You can insert a meat thermometer into the center of the steak to gauge: 140-145 degrees indicates medium doneness, and 145-150 should indicate medium-well doneness.
Right before the steaks are done, turn the heat off and pour the prepared Garlic Butter Sauce on top of the steaks. Add the crispy baby potatoes back to the panand garnish with sprigs of rosemary and smoked sea salt flakes (optional). ENJOY!
