In a medium bowl, mix together the ground walnuts, milk, sugar, butter, and cinnamon until it forms a paste. Set aside.
Make the Slovak Kolache
In a small bowl, dissolve the yeast and 1 teaspoon sugar in the warm milk.
Using a stand mixer with a dough hook attachment, mix together the yeast mixture, remaining sugar, salt, butter, eggs, and sour cream. Beat on a low speed for a minute, then add the flour. Continue mixing on low for 2-3 minutes, then on medium-high for 5-6 minutes. The dough should be just slightly sticky. If needed, add another ½ cup of flour.
Form the dough into a ball, then transfer it to a greased bowl. Cover with cling wrap or cloth and allow the dough to rise in a warm place for 60-75 minutes, or until the dough has doubled.
Once the dough has doubled, punch it down with your fist, then divide into 3 equal pieces and roll each piece into a rectangle, about ⅛ inch thick.
Brush each rectangle with melted butter and spread the walnut filling on top, leaving the far long edge of the dough uncovered by the filling.
Carefully and tightly roll the dough lengthwise. Pinch together the ends and transfer the prepared rolls to a piece of parchment paper with the seams side down and wrap with cling wrap. Repeat with the other 2 dough pieces.
Let the rolls rise for 50-60 minutes. Meanwhile, preheat the oven to 350°F.
Once risen, bake the Slovak Kolache for 30- 40 minutes until golden. Transfer to awire rack and cool completely before slicing. ENJOY!
