In a large bowl, add the coconut milk, vanilla, and 3 tbsp maple syrup. Whisk until the mixture is well-combined. Taste, and add more maple syrup if needed. Set aside.
Using a high-speed blender, blend the cherries with the remaining maple syrup until the mixture is smooth. Taste, and add more maple syrup if needed.
Divide the cherry purree equally between your popsicle molds. Place the molds in the freezer for15 minutes, or until the cherry puree has set.
Pour in the coconut milk mixture on top of the cherry puree. Insert popsicle sticks into the molds, then place them in the freezer for at least 2 hours, or until firm. ENJOY!
