Easy Cherry Coconut Creamsicles (GF, DF, VG)

Here in Lawrence, the weather has finally dipped to below 6 degrees F. So while I’m sitting here wrapped in a heated blanket watching snow fall on my windowpane, my mind can’t help but think of all the summer thoughts (and recipes!)

Anyways, I recently found my old recipe book that I used to write in back in my college days.

I flipped through a few pages, and re-discovered my favorite summer recipe: cherry coconut creamsicles!

This dairy-free creamsicle recipe is super easy to make, and needs just 4 ingredients!

As soon as the weather warms up and cherry season hits, you can bet I’m making batches of these ahead of time for a quick and easy cool-off snack!

What You Need to Make Dairy-Free Cherry Coconut Creamsicles

Ingredients

  • 1 (15 oz) can full-fat coconut milk (or heavy cream if not DF)
  • 1 tsp vanilla extract
  • 1/4 cup maple syrup (or honey)
  • 1 3/4 cup cherries, fresh or frozen

How to Make Dairy-Free Cherry Coconut Creamsicles

  1. In a large bowl, add the coconut milk, vanilla, and 3 tbsp maple syrup. Whisk until the mixture is well-combined. Taste, and add more maple syrup if needed. Set aside.
  2. Using a high-speed blender, blend the cherries with the remaining maple syrup until the mixture is smooth. Taste, and add more maple syrup if needed.
  3. Divide the cherry purree equally between your popsicle molds. Place the molds in the freezer for 15 minutes, or until the cherry puree has set.
  4. Pour in the coconut milk mixture on top of the cherry puree. Insert popsicle sticks into the molds, then place them in the freezer for at least 2 hours, or until firm. ENJOY!
