This caramelized onions and arugula pizza recipe is the perfect balance of sweet and savory, with fresh arugula and crunchy sunflower seeds giving it a light, peppery finish. It’s easy to make, packed with flavor and is such a satisfying pizza recipe that feels a little fancy without much effort.
What You Need to Make Caramelized Onions and Arugula Pizza
- 1 batch pizza dough (store-bought or homemade)
- 2 large onions, thinly sliced
- 2 tbsp olive oil (for caramelizing the onions)
- 1 tbsp balsamic vinegar (optional)
- 1 cup shredded mozzarella cheese
- 1/2 cup goat cheese or ricotta (optional for a creamier texture)
- 2 cups fresh arugula
- 1/4 cup sunflower seeds
- Salt and pepper to taste
- Extra olive oil for drizzling
How to Make Caramelized Onions and Arugula Pizza
- Preheat the oven: Heat your oven to 450°F. Prepare a pizza stone or baking sheet with parchment paper.
- Caramelize the onions: In a pan, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and a pinch of salt. Stir occasionally and cook for about 25 minutes, or until the onions are soft and golden brown. If you want a sweeter flavor, stir in the balsamic vinegar near the end of cooking. Set the onions aside.
- Roll out the dough: Stretch or roll out your pizza dough to your desired thickness. Transfer it to your prepared baking sheet or pizza stone, and lightly brush the dough with a bit of olive oil.
- Top the pizza: Spread the caramelized onions evenly across the dough. Sprinkle on the mozzarella cheese, and if you’re using it, add the goat cheese or ricotta in dollops. Season with salt and pepper.
- Bake: Bake the pizza for about 12-15 minutes, or until the crust is golden and the cheese is bubbling.
- Add arugula and sunflower seeds: Once the pizza is out of the oven, immediately top it with fresh arugula and sprinkle sunflower seeds on top. Drizzle with a little extra olive oil if you like.
