A breakfast casserole can be made out of various ingredients! The base ingredients include eggs, milk, cheese, and a type of bread – in this case, canned buttermilk biscuits!

What I love about a breakfast casserole is how easy it is to customize. This Weight Watchers Breakfast Casserole Recipe uses fresh cherry tomatoes, spinach, and onions, but you can also add other ingredients like mushrooms, hot Italian sausage, bacon, zucchini, ham, and much more.

Keep in mind that the ingredients you use will affect the total WW points of the breakfast casserole.

Every time I make this breakfast casserole and bring it to potlucks, I get asked for the recipe over and over again!

Full of veggies, healthy proteins, and just the right amount of “comfort food” ingredients, this casserole is sure to satisfy and is healthier than many other breakfast casserole recipes out there.

It’s a great breakfast to serve in the morning, a hearty meal for a weekend brunch, and leftovers keep and reheat well for the next day too. I guarantee the whole family will love it!

Do I Need to Use Country Gravy?

Yes! What makes this breakfast casserole so easy and flavorful is the Country Gravy Mix.

 I recommend not skipping this ingredient as it really pulls the whole dish together.

How to Make Weight Watchers Breakfast Casserole

Step 1. Preheat your oven to 375 F. Spray a 10″x 10″ square baking dish with melted butter or cooking spray.

Step 2. Prepare the gravy by whisking together the gravy packet, milk, and water together in a medium bowl until well-combined. Set aside.

Step 3. Place the biscuits on the bottom of the baking dish and flatten until evenly covered.

Step 4. Layer on the cherry tomatoes, fresh spinach, then sliced onions evenly.

Step 5. Sprinkle the shredded cheese evenly, then pour in the egg mixture. Season with salt, pepper, garlic powder, and red pepper flakes.

Step 6. Pour in the prepared country gravy evenly, then cover with aluminum foil.

Step 7. Bake for 35 minutes, then remove the foil and bake uncovered for another 10 minutes, or until the tops are golden and the casserole is fully cooked through.

Step 8. Slice into 9 squares, then serve warm. ENJOY!

Customizing Your Breakfast Casserole

One of my favorite parts about making this easy Breakfast Casserole is how easy it is to customize to different dietary preferences. Here are some of my favorite ingredient substitutions and topping suggestions:

  • Eggs: while I recommend using organic, farm-fresh eggs for this recipe, you can also use an egg substitute like the Follow Your Heart Vegan Egg
  • Cooking Spray: If you don’t use cooking spray, simply substitute it with melted butter or olive oil.
  • Spices: For this recipe, I kept it simple with salt, black pepper, garlic powder, and red pepper flakes. But you can also experiment with cilantro, parsley, onion powder, chili powder, and much more!
  • Buttermilk Biscuits: For a different take on the casserole, you can use hash browns instead of the buttermilk biscuits on the bottom!
  • Vegetables: Feel free to use red bell peppers, mushrooms, green pepper, zucchini, broccoli, and any other veggies you want!
  • Meat: If you want to add some meat in the casserole, I recommend chopped lean ham, turkey sausage crumbles, breakfast sausage, grilled chicken cubes, and/or bacon bits! Cook the meat before adding it on top of the buttermilk biscuits in the casserole dish.
  • Cheese: I personally love using regular Mexican blend cheese in this recipe, but you can also use cheddar cheese, colby jack cheese, dairy-free cheese or even fat free cheese.
  • Milk: You can use whole milk, skim milk, plant-based milk, or substitute with water.

How do you know when an egg casserole is done?

Your casserole is done when the mixture is fully cooked through and the tops are golden. If using a thermometer, the center of the casserole should read about 160° F.

Can this breakfast casserole be frozen before baking?

Yes. To make this breakfast casserole ahead of time, cover the unbaked casserole with plastic wrap, then wrap it with aluminum foil. Freeze for up to 1 month.

When ready to bake, thaw the casserole in the refrigerator and bake it for 45-50 minutes.
