Cozy Maple Pumpkin Oat Bars (GF, DF, V)

Pumpkin…In the Summer?

I know, I know – it’s not fall yet. As a big fan of all things pumpkin and cinnamon, I’m kind of bummed that pumpkin-spiced treats are often seen as exclusive to the Fall season! So here in our house, we’ve decided to change that. Last week, we enjoyed these fluffy Cinnamon Swirl Pound Cake (which was a HUGE hit). This week, we’ve stocked up on pumpkin puree so we can have pumpkin goodies in the summer too! Hmm hmm!

For the last few days, it’s been raining a whole lot here in Lawrence. So of course, we were craving something warm and sweet – and out came this super easy Maple Pumpkin oat bars recipe! These hearty, thick, and chewy bars make the most delectable breakfasts and healthy snacks! And when I say it’s easy to make, I totally mean it! In fact, it’s so easy that even my non-baking husband can make a whole batch from start to finish in 30 minutes flat.

Ingredients to Make Maple Pumpkin Oat Bars

Make Your Own Oat Flour

Oat flour is by far one of my favorite gluten-free flours. Why? Making your own oat flour is ridiculously simple. I like making homemade Oat Flour because it has all the benefits of store-bought oat-flour and is one of the most affordable ways to bake gluten-free! Here’s how you can make them:

  1. Add 2-3 cups of old-fashioned rolled oats to high-speed blender or food processor.
  2. Blend on high until the oats turn into a fine flour.
  3. Store in an air-tight container.

Make Your Own Pumpkin Pie Spice!

Don’t have pumpkin pie spice on hand? Whisk your own batch in just 2 minutes! I like to make the following recipe yields a larger batch, so adjust as needed.

  • ¼ cup ground cinnamon
  • 4 teaspoons ground nutmeg
  • 4 teaspoons ground ginger
  • 1 tablespoon ground allspice

Mix the ingredients and store in an airtight container.

How to Make Maple Pumpkin Oat Bars

  1. Preheat oven to 350°F. Lightly spray an 8×8″ square pan or line with parchment paper. Set aside.
  2. In a medium bowl, add oat flour, rolled oats, pumpkin pie spice, baking powder, baking soda, and salt. Whisk to combine.
  3. In a larger bowl, add pumpkin puree, coconut oil, maple syrup, eggs, and vanilla extract. Whisk to combine.
  4. Add the dry ingredients into wet. Mix until combined. If using, fold in chopped nuts and chocolate chips.
  5. Pour batter into the prepared baking pan.
  6. Bake until edges are lightly golden, about 20-25 minutes. (see notes)
  7. Once done, remove from oven and cool for at least 30 minutes before slicing. Serve with coconut cream, raisins, and extra chopped nuts/chocolate chips. ENJOY!

Notes

  • To test doneness, insert a toothpick into the middle. It should come out clean.
