These Maple Pumpkin Oat Bars are full of wholesome ingredients like oats, coconut oil, chopped nuts, and maple syrup. So easy and delicious, this is the perfect recipe for an easy breakfast or snack!
In a medium bowl, add oat flour, rolled oats, pumpkin spice, baking powder, baking soda, and salt. Whisk to combine.
In a larger bowl, add pumpkin puree, coconut oil, maple syrup, eggs, and vanilla extract. Whisk to combine.
Add the dry ingredients into wet. Mix until combined. If using, fold in chopped nuts and chocolate chips.
Pour batter into the prepared baking pan.
Bake until edges are lightly golden, about 20-25 minutes. (see notes)
Once done, remove from oven and cool for at least 30 minutes before slicing. Serve with coconut cream, raisins, and extra chopped nuts/chocolate chips. ENJOY!
Notes
To test doneness, insert a toothpick into the middle. It should come out clean.
