Quick Cinnamon Swirl Pound Cake

No Yeast? No Problem!

Have you ever craved some warm, gooey cinnamon roll only to find that you’re missing ONE ingredient to make it? And that all four stores nearby just so happen to sell out of that one key ingredient? Believe it or not, that’s exactly what happened when my cousin came to visit this past week. You see, he had been craving cinnamon rolls, and I had so valiantly volunteered to make them before realizing I didn’t have yeast! So what’s a girl to do?

Being a stubborn baker, I knew I had to pivot. “No yeast? no problem!” I thought. Combining a few of my trusty quick bread recipes, I whipped up these delicious Cinnamon Swirl Pound Cake! And trust me when I say this, the entire loaf didn’t even last a full 24 hours. In fact, my cousin loved it so much, he asked me to make these heavenly swirl cake again the next day! I guess you could say that my no-yeast situation was a blessing in disguise after all (:

Ingredients to Make Cinnamon Swirl Pound Cake

Mix-In’s (Optional)

  • chocolate chips, chopped nuts, dried fruits

Crumble Topping (Optional)

  • 1 Tbsp  brown sugar
  • 1/2 tsp cinnamon

How to Make Cinnamon Swirl Pound Cake 

  1. Preheat oven to 350F. Lightly spray or line an 8 x 4-inch loaf pan. Set aside.
  2. Add apple cider vinegar to milk. Stir and let sit for 5 minutes.
  3. Whisk butter and sugar until combined. Add into the milk mixture, then add in the vanilla extract.
  4. In a separate bowl, add flour, cornstarch, baking powder, baking soda, and salt. Whisk until combined.
  5. Add the flour mixture into the wet ingredients. Using a spatula, stir until combined. If using, fold in your mix-in’s.
  6. In another bowl, add cinnamon and brown sugar. Mix until combined.
  7. Add ¼ of the batter into the loaf pan. Sprinkle ¼ of the cinnamon mixture. Swirl the mixture using a knife. Repeat until batter runs out.
  8. Mix crumble topping together, and sprinkle over the top of the loaf (optional).
  9. Bake loaf in the preheated oven for approximately 50 minutes, or until a toothpick inserted in the center of the loaf comes out clean
  10. Once done, cool for 30 mins, then cut into 12 slices. ENJOY!

A Few Tips for Best Results!

  • Measure the flour using the “scoop and level” method. Stir flour with a spoon to aerate. Then spoon the flour into your measuring cup all the way to the top, and level the top using use the back of a knife. This ensures that the flour isn’t too packed inside the measuring cup, which can happen with scooping.
  • Unlimited topping ideas. Try adding in some chocolate chips, chopped pecans, or dried fruit. You can also add a simple glaze on top for a decadent dessert!
