Quick Cinnamon Swirl Pound Cake
No Yeast? No Problem!
Have you ever craved some warm, gooey cinnamon roll only to find that you’re missing ONE ingredient to make it? And that all four stores nearby just so happen to sell out of that one key ingredient? Believe it or not, that’s exactly what happened when my cousin came to visit this past week. You see, he had been craving cinnamon rolls, and I had so valiantly volunteered to make them before realizing I didn’t have yeast! So what’s a girl to do?
Being a stubborn baker, I knew I had to pivot. “No yeast? no problem!” I thought. Combining a few of my trusty quick bread recipes, I whipped up these delicious Cinnamon Swirl Pound Cake! And trust me when I say this, the entire loaf didn’t even last a full 24 hours. In fact, my cousin loved it so much, he asked me to make these heavenly swirl cake again the next day! I guess you could say that my no-yeast situation was a blessing in disguise after all (:

A Few Tips for Best Results!
- Measure the flour using the “scoop and level” method. Stir flour with a spoon to aerate. Then spoon the flour into your measuring cup all the way to the top, and level the top using use the back of a knife. This ensures that the flour isn’t too packed inside the measuring cup, which can happen with scooping.
- Unlimited topping ideas. Try adding in some chocolate chips, chopped pecans, or dried fruit. You can also add a simple glaze on top for a decadent dessert!
