The Easiest Afternoon Snack: Loaded Banana!

If you’re craving something simple, healthy, and ridiculously delicious, try this 3-Minute Loaded Banana recipe! Made with just 4 simple ingredients, this super easy recipe will hit that sweet spot anytime! Can be easily modified to gluten-free, dairy-free, and vegan!

Ingredients to Make Loaded Banana:

  • 1 large banana 
  • 1-2 tbsp of your favorite spread (I recommend nut butters, Nutella, or coffee spreads)
  • 1 energy bar (I recommend Quantum Energy Squares, RX Bars, Mezcla, GoMacro, or Eat Like A Woman)
  • Nuts or seeds, chopped

How to Make Loaded Banana:

  1. Peel and slice the banana into coins. Place it in a small bowl.
  2. Add a large dollop of your favorite spread.
  3. Cut up the energy bar into small cubes and sprinkle it into the bowl.
  4. Sprinkle with chopped nuts/seeds.
  5. Serve immediately. ENJOY!

I've always been a person who is drawn to new things, new experiences. Sometimes, that NEW translates to a new country, or a new routine, or a new recipe.

This time, that NEW means trying a new ingredient to cook with..lobster mushrooms!

No more boring tacos! (jk, all tacos are amazing 😉)

But guys, this epic "5-star restaurant-quality" taco recipe features perfectly seasoned wild lobster mushrooms that will wow your tastebuds! 💥 

It's easily customizable with any dietary restrictions, and is a fun bougie recipe to cook once in a while!

Each lobster mushroom taco recipe yields 4 servings, or 8 tacos. Gluten-free, dairy-free, vegan!

Being a third-culture kid, I grew up eating fusion Being a third-culture kid, I grew up eating fusion food ALL the time 🇮🇩🇺🇸 

From chowing on the trendy "sushi-ritos" with friends and regularly eating homecooked fusion dinners (my mother often couldn't find some of the more traditional Indonesian ingredients in America, so we had to improvise!)

But you know, I'm really thankful for my childhood.

Having to innovate with different ingredients has taught me a deep appreciation for the mixing of flavors 💥 

And so last night (as I was cooking mushroom rice pilaf for dinner), I thought "you know, why not put a little Mexican spin on this very Middle Eastern dish?"

A ½ cup of roasted hatch green chiles and a handful of chopped cilantro later, we had a winning combo of our modern mushroom rice pilaf fusion recipe.

Seriously guys, it was so good we finished the entire panful of pilaf in 2 meals.

In honor of this warmer morning today, here’s a photo of Evan and me in the snowy cold last week ❄️ 

Every week, we love setting aside time for a date! While it’s typically filled with sushi, burgers, and good convos, we decided to switch it up! So last week, I convinced Evan to join me for some snow fun outside⛄️ 

I mean, does anyone else get so fidgety after staying indoors all day?? 🤷🏻‍♀️
