5-Ingredient No Bake Peanut Butter Bars (GF, V)

Okay, okay. This post is long overdue, but we’re finally ready to share our secret NO-BAKE Peanut Butter Bar recipe! Made with just 5 wholesome ingredients, this recipe only takes 10 minutes to make, and 30 minutes to freeze! If you loved our crowd-favorite Reese’s Copycat recipe, I guarantee this No-Bake Peanut Butter Bar will be your new favorite EASY dessert to make (and eat!)

If you’re looking for a foolproof chocolate peanut butter dessert, this is it!! These No-Bake Peanut Butter Bars are incredibly delicious, decadent, and SO easy to make! It requires no oven time, and you probably have all the ingredients ready in your pantry right now!

Ingredients to Make No-Bake Peanut Butter Bars

  • 1 ¼ cup natural creamy peanut butter
  • ⅓ cup maple syrup
  • 2 cups old-fashioned rolled oats , sub 1 ½ cups oat flour for smoother consistency
  • ½ cup dark chocolate chips
  • 1 tbsp coconut oil

How to Make No-Bake Peanut Butter Bars

  1. Line a 9×13 pan with parchment paper. In a large bowl, mix together the peanut butter and maple syrup. Add in the rolled oats or oat flour and mix until well-combined.
  2. Transfer the peanut butter mixture into the lined loaf pan, then evenly press down with a spatula.
  3. Add dark chocolate chips and coconut oil into a microwave-safe bowl. Microwave for 20 seconds. Stir, then repeat until chocolate is fully melted.
  4. Pour the melted chocolate over the peanut butter layer. Evenly spread the mixture with a spatula.
  5. Set the loaf pan in the freezer for 30 minutes, then cut into 16 bars.
  6. Enjoy immediately, or store bars in the refrigerator for up to 1 week.

These No-Bake Peanut Butter Bars are incredibly delicious, decadent, and SO easy to make! All you need is 5 simple ingredients: peanut butter, maple syrup, oats, chocolate chips, and coconut oil! Being a third-culture kid, I grew up eating fusion Being a third-culture kid, I grew up eating fusion food ALL the time 🇮🇩🇺🇸 

From chowing on the trendy "sushi-ritos" with friends and regularly eating homecooked fusion dinners (my mother often couldn't find some of the more traditional Indonesian ingredients in America, so we had to improvise!)

But you know, I'm really thankful for my childhood.

Having to innovate with different ingredients has taught me a deep appreciation for the mixing of flavors 💥 

And so last night (as I was cooking mushroom rice pilaf for dinner), I thought "you know, why not put a little Mexican spin on this very Middle Eastern dish?"

A ½ cup of roasted hatch green chiles and a handful of chopped cilantro later, we had a winning combo of our modern mushroom rice pilaf fusion recipe.

Seriously guys, it was so good we finished the entire panful of pilaf in 2 meals.

In honor of this warmer morning today, here’s a photo of Evan and me in the snowy cold last week ❄️ 

Every week, we love setting aside time for a date! While it’s typically filled with sushi, burgers, and good convos, we decided to switch it up! So last week, I convinced Evan to join me for some snow fun outside⛄️ 

I mean, does anyone else get so fidgety after staying indoors all day?? 🤷🏻‍♀️

Today, I woke up exhausted. And not just the “oh Today, I woke up exhausted. And not just the “oh I could use 5 more minutes” kind of tired. But “whoa, I feel like I got hit by a truck” kind. So instead of pushing harder, I chose to rest.

How? I’ve been saving my PTO’s for months (seriously, I’ve worked so hard and was extra intentional about setting aside time), so I have the option to take the day off for days like this.

I’m thankful I have gracious supervisors who believe in the importance of getting things done, but also in a healthy work-life balance.

And here’s what I’ve learned: rest could happen anywhere, anytime (yes, including the middle of the work week!) But creating pockets of time to rest is so vital - this is God’s gift to us!

Could I have found an excuse to not rest in the billion things on my to do list? YES. But.. I chose to do so. The world will keep spinning, and today, I will have a slow morning. A time to refresh, a time to be reinvigorated.

Don’t be overwhelmed, it’s ok to stop. Really, I mean that. It’s healthy to our bodies, mind and spirit.

So now that I’m awake, you can find me in under a mountain of blankets just slowly reading, sipping on some @artemistherapeutics Chamba Broth, taking a long bath with @cobigelow #HerbalComfortSoak, baking something exciting with REAL vanilla beans later today, and most of all - being more present in the moment.
