Dark Chocolate No-Bake Cookies (GF, DF, VG)
These Dark Chocolate No-Bake Cookies are super easy to make and incredibly decadent! Vegan, gluten-free, dairy-free, and naturally sweetened, these bites will remind you of chocolate cake – but much healthier! All you need is 8 ingredients (9 if you count salt) and 25 minutes!
Chocolate? Always!
Here’s a confession: I’m a chocoholic. If you’ve been around me for at least 5 seconds, you’ll quickly discover that I have HUGE love for chocolate! Whether it’s for warm fudgy brownies, chocolate chip pancakes, or the classic chocolate chunk cookies, COUNT ME IN.
Now that I think about it, I must take after my mom, because her idea of dessert is a couple squares of chocolate after dinner. So naturally, I’ve developed quite the preference for chocolate as well 🙂
You can try to convince me otherwise, but I like to think that a healthy amount of chocolate is, well, healthy! This is especially true for dark chocolate. Not only is it a great source of antioxidants, dark chocolate is much healthier than milk or white chocolate, plus it’s so much richer and more decadent!
In this recipe, I’ll show you how to make my go-to dark chocolate no-bake cookies that always hits the spot! When my chocolate cravings hit and I feel like indulging in something healthier, this is what I’ll make! Ready for the recipe?

Ingredients to Make Dark Chocolate No-Bake Cookies
- 1½ cup medjool dates, pitted
- 1½ cup almond flour
- ½ cup coconut flour
- ½ cup cacao powder
- 2 tsp vanilla extract
- ⅓ tsp sea salt
- 1/3 cup maple syrup, sub honey
- 1 ½ tbsp nut butter
- dark chocolate chips (optional)

How to Make Dark Chocolate No-Bake Cookies
- Line a baking sheet with parchment paper or silicone sheet. Set aside for later.
- Add pitted dates,almond flour, coconut flour, and cacao powder into a food processor and blend until it crumbles together. Add in the vanilla extract, sea salt, maple syrup, and nut butter and blend until well-combined.
- Roll into 25 balls. Top with a few dark chocolate chips. Freeze for at least 15 minutes. ENJOY!
- Store leftovers in an airtight container in the freezer or fridge.
