The Lowdown on Salmon
Given all the fish in the sea, why salmon? Call me biased, but having had salmon for various dinners growing up, I think salmon is one of the most delicious, versatile, and nutritious fish out there! Packed with healthy omega 3’s, protein, and lots of other vitamins, salmon is an excellent protein choice for any meals!
As with buying any cuts of meat, one tip about buying salmon is to buy good quality salmon! Frozen or fresh, buying quality salmon makes a HUGE difference and will 100% elevate the overall taste of your meal!

Glazed Honey Garlic Salmon with Roasted Zucchini
Ingredients
Glazed Honey Garlic Salmon
- 4 portions salmon fillets
- 1/3 cup honey
- 1/4 cup soy sauce , sub tamari for GF
- 1 medium lime (juiced) (save zest for zucchini)
- 1 tsp red pepper flakes (optional)
- 2 tbsp olive oil
- 3 cloves garlic , minced
- salt & pepper , to taste
Roasted Zucchini
- 4 medium zucchini , cut into strips or rounds
- 1 tbsp olive oil
- 2 cloves garlic , minced
- 1 tsp red pepper flakes (optional)
- salt & pepper , to taste
- zest of 1 lime
To Serve
- 4 cups cooked rice
- sesame seeds
- lime slices
Instructions
- Preheat oven to 375F. Lightly spray or line a baking pan. Add zucchini into the pan, then drizzle with olive oil. Sprinkle red pepper flakes, salt, and pepper. Roast for 12-13 minutes.
- While zucchini is roasting, add honey, soy sauce, lime juice, garlic, and red pepper flakes into a medium bowl. Stir until combined.
- On medium high, heat 2 tbsp of olive oil in a large skillet. Season the fish with salt and pepper. When oil is hot, add salmon to the pan skin-side up. Cook until golden – about 4 minutes. Using a spatula, flip over salmon and cook for another minute.
- Add salmon marinade into the skillet until salmon is fully basted. Cook until sauce is reduced.
To Serve
- Before serving, sprinkle lemon zest unto the roasted zucchini, then top with honey garlic salmon. Garnish with sliced lime and sprinkle with sesame seeds. Serve over rice (optional). ENJOY!
