What You Need to Make Peanut Butter Crackers (Ritz Copycat)

Ingredients for the Copycat Ritz Butter Crackers

  • ½ cup all-purpose flour
  • ½ cup whole-wheat flour
  • ¼ cup cake flour
  • 1 ½ tsp baking powder
  • 1 ½ tbsp granulated sugar
  • ½ tsp salt
  • 3 tbsp cold unsalted butter , cubed
  • 1 tbsp olive oil
  • ¼ cup ice water
  • ¼ tsp salt , to sprinkle

How to Make Homemade Peanut Butter Crackers (Ritz Copycat)

For the Copycat Ritz Butter Crackers

  1. Preheat the oven to 375°F. Line a cookie sheet with parchment paper or a silicone baking sheet (like these ones). Set aside.
  2. In a large bowl, sift in the all-purpose flour, whole-wheat flour, cake flour, and baking powder. Add sugar and salt. Mix until well-combined.
  3. Add the dry mixture into a food processor fitted with the dough blade. Add the cold butter cubes, then pulse until the mixture resembles coarse crumbs. As the food processor continues to run, slowly pour in the olive oil and water. The dough mixture should resemble large clumps at this point.
  4. Transfer the cracker dough to a floured surface and knead the dough into a ball. Sprinkle some more flour on top of the dough, then use a rolling pin to roll the dough out until it is 1/8 inch thick.
  5. Cut 2-3/4 squares in the dough using a sharp knife or crinkle cutters to save time (like this biscuit cutter). You should have about 45-55 crackers.
  6. Using a fork, prick each square until it is well pierced. Transfer the dough squares to the prepared baking sheets. Sprinkle with salt.
  7. Bake for 7 to 12 minutes, or until crackers are just turning brown. Once done, transfer to a wire rack to cool.

For the Peanut Butter Filling

  1. In a medium bowl, mix together the creamy peanut butter and maple syrup.

Making the Peanut Butter Crackers

  1. Flip over a butter cracker, then spread the peanut butter filling. Eat as is, or top with another cracker to make homemade Peanut Butter Sandwich Crackers (like Ritz!)
  2. Eat immediately, or store in an airtight container for up to 4 days.
