This Peanut Butter Crackers recipe is SO easy, and tastes just like the original Ritz Peanut Butter Sandwich Crackers! Just imagine: you can bite into a crispy, buttery crackers filled the creamiest, most delicious peanut butter filling in less than 40 minutes! This recipe is 100% vegetarian, and yields 25 delicious peanut butter crackers.
Preheat the oven to 375°F. Line a cookie sheet with parchment paper or a silicone baking sheet (like these ones). Set aside.
In a large bowl, sift in the all-purpose flour, whole-wheat flour, cake flour, and baking powder. Add sugar and salt, then mix until well-combined.
Add the dry mixture into a food processor fitted with the dough blade. Add the cold butter cubes, then pulse until the mixture resembles coarse crumbs. As the food processor continues to run, slowly pour in the olive oil and water. The dough mixture should resemble large clumps at this point.
Transfer the cracker dough to a floured surface and knead the dough into a ball. Sprinkle some more flour on top of the dough, then use a rolling pin to roll the dough out until it is 1/8 inch thick.
Cut 2-3/4 squares in the dough using a sharp knife or crinkle cutters to save time (like this biscuit cutter). You should have about 45-55 crackers.
