Indian Masala Chai-Spiced Overnight Oatmeal

This Masala Chai-Spiced Overnight Oatmeal tastes just like a creamy bowl of authentic Indian chai latte! Made with old-fashioned rolled oats, black tea, milk, cinnamon, ginger, vanilla, and cardamom, this overnight oatmeal is perfectly sweet and spicy. It can also be served warm or cold – delicious both ways! Naturally gluten-free, and can easily be made dairy-free and vegetarian too!

If you’ve never had overnight oatmeal before, they’re arguably the easiest method to make oatmeal! After all, it’s a no-cook, set-it-and-forget-it approach. Instead of cooking oatmeal by heating it up in the microwave or using the stovetop, you pour some milk into a jar of raw oats and let it soak overnight. Typically, the oats will have absorbed the liquid within 3 hours (though preferably overnight), at which point the oats are softened and ready to be eaten!

Ingredients to Make Indian Masala Chai-Spiced Overnight Oats

  • 1/3 cup black tea
  • pinch of fine sea salt
  • 3/4 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/4 tsp cardamom
  • 1/4 tsp ginger
  • 1/2 tsp vanilla extract
  • 1/2 cup old-fashioned rolled oats
  • 1 tbsp ground flax seed or chia seed, optional
  • 2/3 cup milk of choice
  • 1-2 tbsp maple syrup
  • Toppings: chopped apples, pecans, walnuts

How to Make Indian Masala Chai-Spiced Overnight Oats

  1. Add all the ingredients into a large glass container. Shake until combined.
  2. Cover the jar and refrigerate for at least 4 hours, or preferably overnight. Feel free to add the toppings before refrigerating or just before serving.
  3. When ready to serve, empty the overnight oats into a serving bowl to heat, or eat the cold overnight oats straight from the jar! Add more milk if a thinner consistency is desired.
  4. This Indian Masala Chai Spiced Overnight Oats can be prepared 5 days ahead if stored in the refrigerator. ENJOY!

Today, I woke up exhausted. And not just the “oh I could use 5 more minutes” kind of tired. But “whoa, I feel like I got hit by a truck” kind. So instead of pushing harder, I chose to rest.

How? I’ve been saving my PTO’s for months (seriously, I’ve worked so hard and was extra intentional about setting aside time), so I have the option to take the day off for days like this.

I’m thankful I have gracious supervisors who believe in the importance of getting things done, but also in a healthy work-life balance.

And here’s what I’ve learned: rest could happen anywhere, anytime (yes, including the middle of the work week!) But creating pockets of time to rest is so vital - this is God’s gift to us!

Could I have found an excuse to not rest in the billion things on my to do list? YES. But.. I chose to do so. The world will keep spinning, and today, I will have a slow morning. A time to refresh, a time to be reinvigorated.

Don’t be overwhelmed, it’s ok to stop. Really, I mean that. It’s healthy to our bodies, mind and spirit.

“Come to me, all of you who are weary and burdened, and I will give you rest.”

So now that I’m awake, you can find me in under a mountain of blankets just slowly reading, sipping on some Chamba Broth, taking a long bath with @cobigelow #HerbalComfortSoak, baking something exciting with REAL vanilla beans later today, and most of all - being more present in the moment.
