Grilled Veggie Sandwich with Creamy Hummus Spread
This delicious Grilled Veggie Sandwich recipe is filled with flavorful grilled eggplant, bell peppers, yellow squash, and onions, and topped with fresh greens and a creamy hummus spread! It’s a fantastic recipe for an outdoor lunch or a light dinner. Healthy and tasty!
Ingredients
- 1 medium eggplant, sliced
- 1 red bell pepper, sliced
- 1 yellow squash or zucchini, sliced
- 1 large onion, sliced
- 2 tablespoons of olive oil
- Salt and pepper to taste
- 4 slices of your favorite bread (whole wheat, ciabatta, or sourdough work great)
- 1/2 cup of hummus (store-bought or homemade)
- 1 cup of fresh arugula or mixed greens
How to Make Grilled Veggie Sandwich
Step 1: Grill the Vegetables
- Prepare the Grill: Preheat your grill to medium-high heat. If you’re using a grill pan, preheat it over medium-high heat.
