Where Can I Find Annie’s Homegrown Products?
For this recipe, I purchased all the ingredients at my local co-op – The Merc! I love shopping at co-ops because when you shop at a co-op, “you are supporting local farmers and producers as well as investing in supply chain transparency.” Co-ops were designed to empower entrepreneurs and small business owners in local areas around the nation by bringing their products to market. And we, as shoppers, can make a difference by purchasing our groceries there to support and keep them in business. To find YOUR local co-op, click .
FUN FACT: Did you know that local products at food co-ops nationwide average 21% of total co-op sales? (compared with a national grocery store average of just 1.8%).
How To Make the BEST Mac and Cheese Bites
- Preheat oven to 425°F. Line a large baking pan with parchment paper or silicone baking mat. Set aside.
- Bring a large pot of salted water to a boil. Add pasta and cook until al dente. Drain and set aside.
- Add butter, milk, Annie’s cheese packet, pepper jack cheese, and parmesan cheese into the pot. Once sauce is thickened, add the cooked pasta back into the pot and stir to combine.
- Place mac ‘n cheese in an airtight container. Tightly pack the mixture and freeze for at least 1 hour.
- Meanwhile, place eggs in a small bowl. Then add cheddar square crumbs, salt, paprika in another bowl and stir to combine. Set aside.
- Remove mac ‘n cheese from the freezer and scoop out 1 tbsp of the mixture. Roll it around your hand to make a tightly-packed ball that is about 1 ½ inches in diameter. Repeat with the remaining mixture.
- Dip mac ‘n cheese ball in the egg bowl, then roll it through the crumbs mixture. Place on the prepared baking sheet, and repeat with remaining balls.
- Bake for 8-10 minutes until mac bites are light and golden. Serve immediately.
I had SO much fun creating (and eating) this Three Cheese Mac Bites recipe! But I’d love to know: how do YOU eat your @annieshomegrown’s mac ‘n cheese?
