We’re doing the happy dance over here because we've finally perfected our epic Three Cheese Mac and Cheese Bites recipe and it is a HUGE hit! I partnered up with Annie's Homegrown and FeedFeed to bring back your childhood favorites all wrapped up in some unbelievable deliciousness. Warm and crunchy on the outside, super cheesy and gooey on the inside. Need I say more??
Bring a large pot of salted water to a boil. Add pasta and cook until al dente. Drain and set aside.
Add butter, milk, Annie’s cheese packet, pepper jack cheese, and parmesan cheese into the pot. Once sauce is thickened, add the cooked pasta back into the pot and stir to combine.
Place mac ‘n cheese in an airtight container. Tightly pack the mixture and freeze for at least 1 hour.
Meanwhile, place eggs in a small bowl. Then add cheddar square crumbs, salt, paprika in another bowl and stir to combine. Set aside.
Remove mac 'n cheese from the freezer and scoop out 1 tbsp of the mixture. Roll it around your hand to make a tightly-packed ball that is about 1 ½ inches in diameter. Repeat with the remaining mixture.
Dip mac ‘n cheese ball in the egg bowl, then roll it through the crumbs mixture. Place on the prepared baking sheet, and repeat with remaining balls.
Bake for 8-10 minutes until mac bites are light and golden. Serve immediately.
