Easy Caprese Toast with Pan-Roasted Tomatoes, Basil, and Fresh Mozzarella

In my opinion, breakfast is an integral part to jump-starting your day. I’ve found that what I eat for breakfast really does determine how I start off that day! But after years of having sweet toasts for breakfast, I finally decided it was time for change. So I started looking for a new recipe — one that would fulfill all my savory brunch cravings! And finally, after trying many different combinations, I can finally declare that this one is my favorite – Caprese Toast!

As you might imagine, the star of the show in this recipe is none other than the glorious cherry tomatoes! Where I live in Indonesia, they are in season – and I can’t get enough of them! These red bulbs of joy are so sweet, flavorful, and pair SO well with the other ingredients in this recipe.

This crowd-favorite Easy Caprese Toast features crunchy edges, pillowy texture, and a flavor-bursting combination of pan-roasted cherry tomatoes, fresh basil, and mozzarella. Truly a great breakfast and snack option for anytime of the year!

What You Need to Make Easy Caprese Toast

  • 1 cup cherry tomatoes
  • 2 slices sourdough bread
  • 3 tbsp extra-virgin olive oil
  • salt & pepper
  • 1 tbsp fresh mozzarella cheese
  • ⅓ cup fresh basil leaves

How To Make Easy Caprese Toast

1. Heat 1 tbsp olive oil into a large pan over medium heat. Add cherry tomatoes cut side down. Cook for one minute and flip. Season with salt and pepper, then cook for another minute. The tomatoes should be juicy, tender, and slightly charred.

2. Drizzle the remaining olive oil evenly over each slice of toasted sourdough. Then layer the pan-roasted cherry tomatoes and shredded mozzarella. Top with fresh basil. ENJOY!

Ingredients
  

  • 1 cup cherry tomatoes , halved
  • 2 slices sourdough bread , toasted
  • 3 tbsp extra-virgin olive oil , divided
  • salt & pepper , to taste
  • 1 tbsp fresh mozzarella cheese , shredded into ½-1 inch bits
  • cup fresh basil leaves , roughly torn

Instructions
