Homemade Granola = Better Granola
Okay folks, I’m finally convinced. Homemade granola is better granola. I used to think that those high-end artisan granolas were the jam…until I made these dark chocolate coconut granola and tried them fresh from the oven. Mind. Blown. There’s just something about the warmth, sweetness, and crunch all melded together that you can’t get with store-bought granolas!
This incredibly crunchy granola is made with toasted coconut, slivered almonds, chopped pecans, maple syrup, rolled oats, and of course, dark chocolate! Loaded with protein and fiber, this healthy AND delicious granola makes the perfect addition to your breakfasts and snacks!
Personally, I LOVE adding this granola to my favorite smoothie bowl – especially in the summer! Yum, yum, yum!

How to Make Dark Chocolate Coconut Granola Clusters
- 1 tbsp ground flax seed
- 2 ½ tbsp water
- 1 ½ cups old-fashioned rolled oats
- ¾ cup unsweetened coconut flakes
- 1 cup nuts (½ cups slivered almonds + ½ cup chopped pecans)
- ½ cup dark chocolate chunks
- 1 tbsp chia seeds
- ¼ cup cacao powder
- 3 tbsp melted coconut oil , sub butter
- ⅓ cup maple syrup
- 1 tsp vanilla extract
- 1 tbsp coconut sugar
- ¼ tsp sea salt
How to Make Dark Chocolate Coconut Granola Clusters
- Preheat oven to 300°F. Line a baking sheet with parchment paper or silicone baking mat.
- Prepare “flax eggs” by adding flax seed and water into a bowl. Stir and set aside for 5 minutes until mixture gels up.
- Add all the ingredients (except dark chocolate chunks) into a large bowl. Stir to combine.
- Spread the granola mixture unto the prepared baking sheet. Using a spatula, press down until mixture is tightly packed.
- Bake for 30-40 minutes. Halfway through, turn the pan around for even baking. You’ll know it’s done when granola is crunchy and golden.
- Cool completely. Stir in dark chocolate chunks. Break into clumps. ENJOY!
Tips and Tricks for the PERFECT Granola Clusters
If you’re like me and you LOVE granola clusters, make sure you follow these tips for a super chunky batch of granola!
- Thoroughly coat your dry ingredients with the wet mixture: This really helps your granola to form little clumps and avoid it from burning.
- Don’t omit oil: Without some type of fat in the recipe, you’ll end up with a batch of dry oats.
- Use old-fashioned rolled oats: Using quick oats may result in a “dusty” granola, and it doesn’t clump as well.
- Don’t stir your granola while it’s baking: For extra clumpy granola clusters, resist the urge to stir.
- Let granola cool completely: As your granola cools on the baking sheet, it will start to form clusters and harden more. Once it’s cool, break them up into your preferred sizes!
