‘Tis the Season for Strawberry Oat Bars!
Sooo it’s a ‘lil past midnight here and I just finished up a very exciting project that I’m excited to announce very SOON! As I’m snacking on all the berries in season, I have to wonder: is anyone else as excited for strawberry season to finally be here??
I mean, to think of all the fun recipes we can make with strawberries! I’M SO READY.
Anyways, Evan had bought a GIANT pack of strawberries from the store the other day. They were looking like they were at their peak freshness, and I didn’t want to miss out on this prime moment! So of course, what better way to celebrate the start of the strawberry season by sharing a super easy & super delicious Fresh Strawberry Oat Bars recipe?
Seriously, my friend Hope made a variation of these, and I was definitely inspired to bake up some strawberry bars the next day! Either way, make these ahead of time for a quick and easy snack, breakfast, or even dessert! You won’t regret it!
Ingredients to Make Strawberry Oat Bars
Gluten-free, dairy-free, vegan, AND delicious? So what’s in these bars anyways? I’m glad you asked!
For the Bars:
- Old-fashioned rolled oats
- Almond flour
- Coconut oil
- Chia seeds
- Maple syrup
- Coconut sugar (or brown sugar)
- Fresh strawberries (of course!)
- Strawberry jam
- Sliced almonds
For the Almond Glaze:
- Powdered sugar
- Almond extract
- Almond milk
How to Make Strawberry Oat Bars
- Preheat oven to 350 degrees. Lightly grease an 8 x 8 baking pan with coconut oil, or line with parchment paper.
- In a medium bowl, add oats, almond flour, coconut oil, maple syrup, coconut sugar, and chia seeds. Mix until combined.
- Using a spatula, transfer the oat mixture into the prepared pan and press firmly until batter is packed to the bottom of the pan.
- Spread the strawberry jam over the crust until it is evenly coated. Then layer with sliced strawberries and almonds.
- Bake strawberry bars for 30 minutes. Meanwhile, make the almond glaze by adding the powdered sugar, almond extract, and milk into a small bowl. Whisk until fully combined.
- Remove the oat bars from the oven and pour the almond glaze on the bars. Bake for an additional 5 minutes.
- Let cool before serving, then cut into 8 squares. ENJOY!
