Healthy Girl Scout Samoas Cookies (No-Bake & Vegan)
This healthy Girl Scout Samoas recipe is made with only four main ingredients: shredded coconut, dates, dark chocolate chips, and coconut oil. I’ll also show you how to make an elderberry version using elderberry syrup! These samoas cookies are much healthier than the store-bought kind, and is dairy-free, vegan, and gluten-free!

Just a few weeks ago, one of my friends sold me a box of Girl Scout’s famous Samoas Cookies. Well, one box quickly turned into a few boxes, and before you know it – we had a bunch of them at our house, and believe me when I say we enjoyed every bit!
(Samoas and Thin Mints are my favorites; my husband Evan loves the Samoas and Tagalongs)
Anyways, now that we’ve run out (and let me tell you how sugared out we are), I thought it’d be good for us to make a healthy recipe for our favorite Samoas cookies to keep on hand as a change.
And you guys, this ended up being so good it might just be our new favorite thing to make (plus, no baking skills required!)
In one batch, I also made an elderberry version using this elderberry syrup in the chocolate drizzle! (and before you say “uh..”, just give it a try! Trust me, it’s such a good combo!!) Plus, the elderberry syrup adds a good dose of antioxidants and vitamins. Love this for the colds season!
So while you should ABSOLUTELY indulge in the regular Samoas too (we still do), go ahead and make these simple Samoas cookies for days you want to eat healthier!
What You Need to Make Healthy Girl Scout Samoas Cookies
Samoas Cookie Ingredients
- 1 cup pitted medjool dates, soaked for 10 minutes to soften
- 1 cup shredded coconut (I used unsweetened, but you can use sweetened if preferred)
- 1/4 teaspoon salt
Chocolate Drizzle Ingredients
- 1/3 cup dark chocolate (use vegan chocolate chips if VG)
- 3/4 teaspoon unrefined coconut oil
- 1 tbsp elderberry syrup (optional)
How to Make No-Bake, Vegan Girl Scout Samoas Cookies
- Line a large baking sheet with parchment paper or a silicone baking sheet (my preference). Set aside.
- In a large non-stick pan, add the shredded coconut and toast on medium-low heat until coconut is slightly golden (but not burnt).
- Add the toasted coconut, pitted dates, and salt into a food processor (I use this one). Pulse until the mixture comes together and starts to form a ball.
- Take 1 tbsp of dough and roll it into a ball, then flatten to make a round cookie. Using a small round cookie cutter or a large metal straw, poke a hole in the middle to create the Samoas shape.
- Place the cookies on the prepared baking sheet and freeze for 10 minutes.
- Meanwhile, add chocolate chips and coconut oil to a microwave-safe bowl. Microwave for 20 seconds, stir, then repeat until the chocolate mixture is melted through. Mix in the elderberry syrup (if using).
- Remove the cookies from the freezer and dip the bottom of the cookies in the chocolate mixture. Place cookies back on the baking sheet and drizzle the rest of the chocolate mixture on top of the cookies (I did it in a horizontal pattern to copy the original Girl Scout Samoas look)
- Freeze the cookies for an additional 10 minutes, or until the chocolate hardens. Once set, remove the cookies and place them in an airtight container. These healthy Samoas cookies will keep in the fridge for up to 5 days. ENJOY!

very tasty! I never would’ve thought of putting elderberry syrup in this, definitely making again
