Healthy Girl Scout Samoas Cookies (No-Bake & Vegan)

This healthy Girl Scout Samoas recipe is made with only four main ingredients: shredded coconut, dates, dark chocolate chips, and coconut oil. I'll also show you how to make an elderberry version using elderberry syrup! These samoas cookies are much healthier than the store-bought kind, and is dairy-free, vegan, and gluten-free!
Line a large baking sheet with parchment paper or a silicone baking sheet (my preference). Set aside.
In a large non-stick pan, add the shredded coconut and toast on medium-low heat until coconut is slightly golden (but not burnt).
Add the toasted coconut, pitted dates, and salt into a food processor (I use this one). Pulse until the mixture comes together and starts to form a ball.
Take 1 tbsp of dough and roll it into a ball, then flatten to make a round cookie. Using a small round cookie cutter or a large metal straw, poke a hole in the middle to create the Samoas shape.
Place the cookies on the prepared baking sheet and freeze for 10 minutes.
Meanwhile, add chocolate chips and coconut oil to a microwave-safe bowl. Microwave for 20 seconds, stir, then repeat until the chocolate mixture is melted through. Mix in the elderberry syrup (if using).
Remove the cookies from the freezer and dip the bottom of the cookies in the chocolate mixture. Place cookies back on the baking sheet and drizzle the rest of the chocolate mixture on top of the cookies (I did it in a horizontal pattern to copy the original Girl Scout Samoas look)
Freeze the cookies for an additional 10 minutes, or until the chocolate hardens. Once set, remove the cookies and place them in an airtight container. These healthy Samoas cookies will keep in the fridge for up to 5 days. ENJOY!
