Vegan Tacos: Lobster Mushroom Recipe (GF, DF, VG)

What Do Wild Lobster Mushrooms Taste Like?

Lobster mushroom is meaty and has a dense texture with a nutty, sweet smell reminiscent of steamed lobster. The lobster mushroom is found in the autumn in New England and on the West Coast, usually from late summer through October. Lobster mushrooms are highly variable in flavor. Fresh specimens with completely white flesh on the interior are the best tasting.

How Do I Cook Lobster Mushrooms?

When cooking lobster mushrooms, simple is best. This dense mushroom will taste best when pan-fried or sauteed (as in this vegan taco recipe!)

Keep in mind that the orange-red color will leach out as you cook the lobster mushrooms cooks, lending a bright color to whatever ingredients you cook it with. We like to chop the lobster mushrooms and cook it just right.

Be sure not not to overcook! Lobster mushrooms can lose its delicate flavor when overcooked, so it’s best to keep an eye on it and remove from heat when done.

What You Need to Make Vegan Tacos: Lobster Mushroom Recipe

  • 2 tbsp olive oil
  • 1 pound fresh lobster mushrooms, cleaned and chopped (see notes for dried option)
  • 2 cloves garlic, minced
  • 1 tbsp smoked paprika
  • 1 tbsp lime juice
  • 1 jalapeno pepper, deseeded and diced (optional)
  • Salt and pepper, to taste
  • 8 corn tortillas

To Serve:

  • avocado, sliced
  • seasoned black beans
  • cilantro lime rice
  • vegan sour cream (optional)
  • green onions, chopped
  • fresh mangos, cubed
  • salsa

How to Make Vegan Tacos: Lobster Mushroom Recipe

  1. In a small bowl, combine smoked paprika, salt, and pepper. Add in the lobster mushrooms. Mix until mushrooms are well-coated.
  2. In a large skillet, heat olive oil on medium-high heat. Once hot, saute garlic until fragrant, about 2 minutes. Then add in the seasoned lobster mushrooms and diced jalapenos (if using) and saute until mushrooms are tender, about 4 minutes.
  3. Stir in lime juice, then remove lobster mushrooms from heat.
  4. Warm the tortillas according to their package directions.
  5. Assemble the tacos by placing the seasoned lobster mushroom mix on top of the tortillas. Top with your choice of toppings, then serve immediately. ENJOY!

NOTES: If using dried wild lobster mushrooms, be sure to follow the package instructions to rehydrate before using.

    I’ve only ever seen the dried lobster mushrooms. where can you buy fresh? Either way, this looks delicious!

    1. Hey Pamela! Lobster Mushrooms are a bit tricky to find, but you can buy them online (like from D’Artagnan). Keep in mind that they are seasonal, so even these online retailers typically only sell them at certain times of the year. Hope this helps!
