In a small bowl, mix together the sugar and salt until well-combined.
In a wide shallow container, add ½ of the sugar-salt mixture, making sure that the bottom of the container is evenly covered.
Using a spoon, create 4 small holes and gently place an egg yolk in each hole.
Pour the remaining sugar-salt mixture until the yolks are completely covered.
Let it rest at room temperature for at least 2 hours (for a runny middle) up to 3½days (for a firmly cured egg that you can shave on pasta, salads, and more!)
Using a slotted spoon, gently pick up an egg yolk and rinse it in a bowl of water. Repeat with the remaining egg yolks.
