What Are Graved Eggs?
Graved eggs are salt-cured egg yolks. The name comes from the method of preparation, which is similar to the process of making gravlax.

What is Curing?
Curing is a food preparation process that preserves food by treating it with salt, nitrites, or nitrates.
What Do Graved Eggs Taste Like?
Graved eggs taste like sweet-salty egg yolk. The consistency will get more firm as you allow the yolks to cure in the sugar-salt mixture.
Ingredients You’ll Need:
- Egg yolks – the main star of the recipe!
- Sugar – adds a touch of delicious sweetness to your eggs
- Salt – the curing ingredient required to prepare graved eggs
How to Make Graved Eggs
- In a small bowl, mix together the sugar and salt until well-combined.
- In a wide shallow container, add 1/2 of the sugar-salt mixture, making sure that the bottom of the container is evenly covered.
- Using a spoon, create 4 small holes and gently place an egg yolk in each hole.
- Pour the remaining sugar-salt mixture until the yolks are completely covered.
- Let it rest at room temperature for at least 2 hours (for a runny middle) up to 3 1/2 days (for a firmly cured egg that you can shave on pasta, salads, and more!)
- Using a slotted spoon, gently pick up an egg yolk and rinse it in a bowl of water. Repeat with the remaining egg yolks.
- Your graved eggs are ready to eat! I especially love it on toast with a dash of hot sauce. ENJOY!

First time trying graved eggs and i have to say, i’m a fan! I’ll be making this again for sure!
