Do you love lemon desserts? Then you are going to love these easy & delicious Lemon Blondies! This lemon blondies recipe will have you coming back for seconds, and thirds! These sweet treats are perfectly lemony, chewy, easy to make, and tastes SO delicious.
Preheat the oven to 350ºF (175ºC). Lightly grease an8x8 square baking pan with melted butter or coconut oil, or line with parchment paper. Set aside.
Into the bowl of a stand mixer, add butter, sugar, vanilla extract, lemon juice, and lemon zest. Beat on medium high speed until the mixture is light and fluffy, then add in the eggs and beat on low speed until combined. Add in the flour, salt, and baking powder. Beat on low speed until just combined.
Pour the mixture into the prepared baking pan and use a spatula to smooth it out. Bake for about 23 minutes, or until the middle is set (a toothpick inserted into the middle of the lemon blondies should come out clean).
Let the lemon blondies cool for 15 minutes.
Meanwhile, make the lemon glaze. In a small bowl,whisk the powdered sugar, lemon juice, lemon zest, and vanilla extract. Pour the glaze over the cooled blondies, then use a spatula to smooth out the glaze. Let the glaze cool, then cut into 9 squares. ENJOY!
