Easy Lemon Blondies Recipe (Lemon Brownie Bars)

What You Need to Make Lemon Blondies
For the lemon blondies:
- 1/2 cup unsalted butter, softened (use coconut oil for dairy-free)
- 3/4 cup granulated sugar
- 1/2 lemon, zested and juiced (approximately 1 tablespoon lemon juice)
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
- 3/4 cup flour (use gluten-free all purpose flour if GF)
For the lemon glaze (optional, but recommended)
- 3/4 cup powdered sugar
- 1 lemon, zested and juiced (approximately 2 tablespoon lemon juice)
- 1/2 teaspoon vanilla extract
How to Make Lemon Blondies
- Preheat the oven to 350ºF (175ºC). Lightly grease an 8×8 square baking pan with melted butter or coconut oil, or line with parchment paper. Set aside.
- Into the bowl of a stand mixer, add in butter, sugar, vanilla extract, lemon juice, and lemon zest. Beat on medium high speed until the mixture is light and fluffy, then add in the eggs and beat on low speed until combined. Add in the flour, salt, and baking powder. Beat on low speed until just combined.
- Pour the mixture into the prepared baking pan and use a spatula to smooth it out. Bake for about 23 minutes, or until the middle is set (a toothpick inserted into the middle of the lemon blondies should come out clean).
- Let the lemon blondies cool for 15 minutes.
- Meanwhile, make the lemon glaze. In a small bowl, whisk the powdered sugar, lemon juice, lemon zest, and vanilla extract. Pour the glaze over the cooled blondies, then use a spatula to smooth out the glaze. Let the glaze cool, then cut into 9 squares. ENJOY!

Turned out great! I topped it with fresh berries and whipped cream and people loved it!
