Can I Make Turtle Pie Ahead of Time?
Yes! You can make the entire Turtle Pie up to 2 days ahead of time and it will stay fresh in the refrigerator.
You can also freeze the pie to extend the freshness up to 3 months.
To freeze, allow the Turtle Pie to set completely in the refrigerator, then double wrap the whole pan in plastic wrap or aluminum foil.
Once ready to serve, just transfer the frozen Turtle Pie into the refrigerator to thaw, slice, and it’s ready to serve!
How to Make Turtle Pie
Make the Oreo crust
- In a medium bowl, stir all the Oreo crust ingredients together. Pour it into a 10-inch springform pan and pack the mixture in very tightly to ensure the crust holds the cheesecake filling when serving.
- Freeze the crust for 10-15 minutes (I like to do this as I prepare the cheesecake filling).
Make the Cheesecake Filling
- Using a hand mixer or an electric stand mixer (fitted with a whisk attachment), mix the heavy cream on medium-high speed until stiff peaks form, approximately 4-5 minutes. Set this whipped cream aside.
- Using a hand mixer or a electric stand mixer (fitted with either a whisk or paddle attachment), beat the cream cheese and sugars on medium speed until the mixture is creamy and smooth. Make sure to scrape down the sides of the bowl with a rubber spatula to make sure everything is thoroughly combined.
- Add in the sour cream, lemon juice, vanilla extract, and caramel extract . Beat for on medium-high speed for about 3 minutes, or until there are no more lumps and mixture is smooth and well-combined.
- Use a rubber spatula to fold in the prepared whipped cream into the cheesecake filling and carefully mix to combine.
Make the Turtle Pie
- Remove the prepared Oreo crust from the freezer. Use your spatula to spread the cheesecake filling into the crust. I find it helps to use an offset spatula to create smooth tops (it just makes it prettier, but is not required).
- Cover the pie with aluminum foil or plastic wrap.
- Refrigerate overnight (recommended), or for at least 8 hours.
- Once set, drizzle the caramel sauce and chocolate syrup, and sprinkle with chopped pecans.
- When ready to serve, use a clean sharp knife to cut the Turtle Pie into 12 slices. Serve as is, or garnish with a dollop of whipped cream! ENJOY!
How Do I Make Mini No-Bake Turtle Pies?
Absolutely! Instead of using a 10-inch springform pan, you can make this recipe in a muffin pan. Just press the crust into each of the cavities and spoon the cheesecake filling on top. Once set, just garnish with caramel sauce, chocolate syrup, and chopped pecans.
These mini Turtle Pies are always a hit at parties!
