This Blackstone chicken fried rice recipe is an easy and quick way to make classic chicken fried rice using your Blackstone griddle. It uses basic ingredients and comes together in just 15 minutes. I love making this recipe for a weeknight meal, or to take to a potluck or picnic. It's also a great way to use up leftover chicken or day-old rice!
Heat the Blackstone griddle to medium-high heat. Once hot, add 1½ Tablespoon of oil or butter until melted.
Add onion, carrots, onion, peas, and garlic. Season with salt and pepper, then sauté until the onion and carrots have softened.
Turn up the heat to high, then add in an additional 1½ tablespoon of butter. Stir until the butter has melted, then mix in the cooked rice, shredded Rotisserie chicken, soy sauce and oyster sauce until combined.
Fry the rice for about 3-4 minutes, then make a hole in the center of the fried rice and drop in the beaten eggs and scramble until cooked. Alternatively, you can also scramble the eggs on a separate part of your Blackstone griddle and stir it all together.
Turn off the heat, then stir in the sesame oil and garnish with green onions. Serve with a side dish of hibachi veggies for a satisfying complete meal the whole family will love. ENJOY!
