What is the Blackstone Griddle?

Blackstone is a popular griddle brand that offers a large cooking space, powerful searing heat, and independent cooking zones.

This Blackstone griddle model is my favorite – and it just so happens to be one of the more affordable ones too.

Using a Blackstone grill in this recipe allows you to make hibachi style chicken fried rice – a family favorite!

What You Need to Make Blackstone Chicken Fried Rice

  • 3 tablespoons butter, divided (use oil if dairy-free)
  • 3 eggs, whisked
  • 1 red or yellow onion, diced
  • 3/4 cup frozen carrots
  • 1/2 cup frozen peas
  • 3 cloves garlic, minced
  • salt and pepper, to taste
  • 4 cups cooked rice, preferably cold
  • 1 Rotisserie chicken, shredded
  • 4 tablespoons low-sodium soy sauce (use tamari if gluten-free)
  • 2 teaspoons oyster sauce
  • 1/2 teaspoons toasted sesame oil
  • green onions, for garnish (optional)
rice, chicken, onions, eggs on a blackstone.

How to Make Blackstone Chicken Fried Rice

  1. Heat the Blackstone griddle to medium high heat. Once hot, add 1 1/2 Tablespoon of oil or butter until melted.
  2. Add onion, carrots, diced onion, peas, and garlic. Season with salt and pepper, then sauté until the onion and carrots have softened.
  3. Turn up the heat to high, then add in an additional 1 1/2 tablespoon of butter. Stir until the butter has melted, then mix in the cooked leftover rice, shredded Rotisserie chicken, soy sauce and oyster sauce until combined.
  4. Fry the rice for about 3-4 minutes, then make a hole in the center of the fried rice and drop in the beaten eggs and scramble until cooked. Alternatively, you can also scramble the eggs on a separate part of your Blackstone griddle and stir it all together.
  5. Turn off the heat, then stir in the sesame oil and garnish with green onions. Serve with a side dish of hibachi veggies for a satisfying complete meal the whole family will love. ENJOY!

How to Store Leftover Fried Rice

Transfer leftover chicken fried rice to an airtight container and refrigerate for up to 3-4 days.

Other Ways to Customize This Recipe

I sometimes also like to add a dash of garlic powder and minced fresh ginger while cooking.

To make hibachi fried rice like in a fancy Japanese steakhouse, you can also sprinkle the fried rice with some sesame seeds right before serving as the last step! It goes perfectly with the few drops of toasted sesame oil.

Frequently Asked Questions

Do you cook rice before putting on griddle?

Yes, you’ll want to cook the rice before putting it on your Blackstone griddle. You can use a rice cooker, Instant Pot, or cook it on stovetop.

Do you have to pre cook rice for fried rice?

Yes. To make the best Blackstone chicken fried rice (or any fried rice, really), you’ll want to use day-old, refrigerated cooked rice.

Freshly-cooked rice will make your fried rice too soft, so pre-cook the rice at least an hour ahead, or preferable the day before.

Some of my favorite fresh vegetables to use in this blackstone chicken fried rice recipe include green beans, bell pepper, mushrooms, and so much more.

What kind of rice is best for fried rice?

I recommend white rice for best results. This chicken fried rice recipe can be made with long-grain rice or short-grain rice. Jasmine rice is one of my favorites!

What if I don’t have rotisserie chicken?

You can substitute the rotisserie chicken with cooked chicken breast or boneless chicken thighs.

Can I Use Other Vegetables in the Chicken Fried Rice?

Absolutely! The great thing about this recipe is how customizable it is.

Can I Double the Fried Rice Recipe?

Yes! This recipe is great for large family dinners. Just double (or triple!) the recipe and dinner are served!
