This easy sweet potato pone recipe takes 10 minutes of active prep time, and is one of our favorite soul food treats to make - and to eat! Paired with warming spices and decadent sweet potatoes, we guarantee you'll be hooked on this! This recipe makes 6-8 servings, and is 100% vegetarian.
Preheat oven to 325 degrees F. Grease an 8x8 baking dish with butter. Set aside.
In a large bowl, add the butter and sugar. Cream until well-combined, then stir in the eggs. Add the sweet potatoes, milk, molasses, vanilla extract, cinnamon, nutmeg, salt, and lemon zest.
Pour the pone mixture into the prepared baking dish and top with brown sugar.
Bake until pone is set, about 55-65 minutes. Allow the sweet potato pone to cool, then slice into pieces (I like to slice mine into squares). ENJOY!
