In a large bowl, use a mixer on low-medium speed to beat the cream cheese, sugar, and vanilla extract until smooth. If making a chocolate filling, add the cocoa powder and mix until combined. Set aside.
In a medium bowl, mix together the Pioneer Buttermilk Biscuit & Baking Mix, milk, and softened butter until a dough forms. Turn the mixture to a floured surface, then knead 4 times and shape it into a ball. Divide into 8 equal portions.
Press each of the biscuit portions into a cavity in the prepared muffin tin. You should have 8 of the 12 cavities filled with biscuit dough. Press the middle of the dough with your fingers to create a hole, then fill this with the cheesecake filling. Drizzle with honey.
