Do I Need Pioneer Buttermilk Biscuit & Baking Mix?
As with most of my recipes, you are always welcome to make your own from scratch. In this case, you can absolutely make your own homemade biscuits as the base of the recipe.
However, I love using Pioneer Buttermilk Biscuit & Baking Mix in this cheese because it saves me so much time – baking biscuits have never been easier.
How to Make Cheesecake Stuffed Biscuits
- Preheat oven to 450°F. Grease 8 of a 12-cup muffin pan with melted butter or coconut oil. Set aside.
- In a large bowl, use a mixer on low-medium speed to beat the cream cheese, sugar, and vanilla extract until smooth. If making a chocolate filling, add the cocoa powder and mix until combined. Set aside.
- In a medium bowl, mix together the Pioneer Buttermilk Biscuit & Baking Mix, milk, and softened butter until a dough forms. Turn the mixture to a floured surface, then knead 4 times and shape it into a ball. Divide into 8 equal portions.
- Press each of the biscuit portions into a cavity in the prepared muffin tin. You should have 8 of the 12 cavities filled with biscuit dough. Press the middle of the dough with your fingers to create a hole, then fill this with the cheesecake filling. Drizzle with honey.
- Bake for 11-15 minutes, until biscuits are fully cooked through. Remove from the oven, then top with fresh-cut berries. Let cool before serving. ENJOY!
