- 2 1/2 Tablespoons low-sodium soy sauce
- 1 Tablespoon brown sugar
- 1 tsp Worcestershire sauce
- 1/2 tsp Dijon mustard
- 1 clove garlic, minced
How To Cook Thin Pork Chops Without Drying Them Out
- Place all the marinade ingredients in a large ziplock bag. Shake to combine.
- Pat the pork chops dry with a paper towel and season them with salt, pepper, and smoked paprika. Place the chops in the marinade, making sure they are fully covered with the seasonings. Let it rest for 30 minutes.
- Meanwhile, heat a large skillet (I use cast iron skillet) on medium-high heat and add some oil or butter. When the pan is hot, add the pork chops and sear for 3 minutes on each side until they are well-browned and the internal temperature reaches 145°F.
- Baste both sides of the chops with the leftover marinade directly in the hot pan, then cook each side for 30 more seconds.
- Transfer the thin chops to a plate or cutting board and let them rest for 5 minutes before cutting so that all of the juices stay inside instead of running out onto your plate! ENJOY!

Followed the directions exactly and it turned out great. I made a butter sauce too and truffle fries on the side and the combination was out of this world.
