- 3 pounds boneless pork shoulder roast, cut into smaller pieces and excess fat trimmed
- ½ cup ketchup

- 2½ cups barbecue sauce, divided

- Salt & pepper, to taste

- Prepared BBQ pulled pork
- Prepared coleslaw mix
- Soft flour tortillas or soft corn tortillas
- Your favorite toppings

- In a large bowl, mix together all the coleslaw ingredients using tongs.
- Transfer to an airtight container, then refrigerate until ready to use.

- Rub the pork roast pieces evenly with the Pioneer Smoky BBQ Pulled Pork Seasoning Mix.
- Into an Instant Pot, add the broth and gently place the pork roast inside the pot.
- Pour 1½ cups of barbecue sauce over the pork, then close the Instant Pot lid and set to sealing.
- Cook on manual high pressure for 45 minutes, then let the pressure naturally release for 5 minutes before a final quick release.
- Shred the pork using 2 forks, then mix in the remaining 1 cup BBQ sauce, if desired.
