What You Need to Make Copycat Starbucks Pistachio Latte

For the Homemade Pistachio Syrup

  • ½ cup water
  • 3/4 cup sugar
  • 3/4 cup chopped pistachios (or 1 tsp pistachio extract)

For the Pistachio Latte

  • 2-3 shots espresso, add more if you like
  • 1 1/4 cup milk
  • 1/2 tablespoon butter
  • ½ tablespoon brown sugar
  • chopped pistachios, to garnish

How to Make Copycat Starbucks Pistachio Latte

Make the Pistachio Syrup

  1. In a small saucepan, add in the water and bring to a boil on medium heat.
  2. Once the water is boiling, add in sugar and chopped pistachios (or pistachio extract).
  3. Boil for 7-10 minutes, or until the sugar has dissolved completely and the mixture has reduced to a thick syrup consistency.
  4. Turn off the heat and remove the saucepan from the stove. Allow the pistachio syrup to cool for 5-10 minutes, then strain out all the remaining pistachio pieces with a fine-mesh strainer.
  5. Transfer the homemade pistachio syrup in an airtight jar and store in the refrigerator for up to 2 weeks.

Make the Pistachio Latte

  1. Heat a small saucepan over medium heat. Once hot, add in the butter and stir until slightly browned, but not burned. Stir in the brown sugar until combined, then remove from heat to cool and set aside.
  2. Meanwhile, heat the milk until hot using a milk steamer. If you don’t have a steamer, you can heat the milk over stovetop or in the microwave.
  3. Pour the hot milk into a large cup. Pour in the brewed espresso, homemade pistachio syrup (adjust amount to taste), and top with the browned butter-sugar mixture. Optionally, you can garnish with a sprinkle of chopped pistachios on top. ENJOY!
