Starbucks is my guilty pleasure, and I go there more often than I can admit. I always pair my favorite coffee with a pastry, and my favorite by far is the Starbucks blueberry scone. It’s so perfectly flaky, smells delicious, and when you bite into it, it feels like eating a blueberry-flavored cloud.
Here’s how to make your own Starbucks blueberry scone at home. Hint: it’s just as delicious and will cost you less money to make!
What You Need to Make Copycat Blueberry Scone Recipe (Starbucks)
- 2 cup all-purpose flour
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup sugar
- 1 stick (1/2 cup) frozen unsalted butter, shredded
- 1 egg
- 1 tsp vanilla extract
- 1 1/4 cup blueberries, fresh or frozen
- 1/2 cup heavy cream, plus more for brushing
- extra sugar, to garnish
How to Make Starbucks Blueberry Scones
- Preheat the oven to 400 F. Line a large baking sheet with parchment paper or silicone baking sheets. Set aside.
- In a large bowl, whisk together the flour, baking powder, salt, and sugar.
- Add in the shredded frozen butter, then use a pastry cutter or a set of forkes or knives to combine the butter into the dry ingredients until the mixture resembles crumbly bits.
- In a small bowl, whisk together the egg, vanilla extra, and heavy cream. Pour this mixture into the large bowl. Add in the blueberries, then gently mix until just combined (don’t overmix).
- Transfer the scones dough to a well-floured surface (like countertops). Dusting your hands with flour, work the sticky dough into a ball, then flatten until it’s about 8-9 inch in diameter. Cut into 8 equal pieces, then transfer to the prepared baking sheet, making sure to let the edges of each scone just barely touching one another. Refrigerate for 10-15 minutes.
- Brush each scone with heavy cream, then sprinkle with extra sugar.
- Bake for 21-24 minutes, or until the scones turn golden brown and smells delicious!
- Once done, transfer the scones to a wire rack and allow them to cool. ENJOY!

You do not want to add too much milk when making the dough. The perfect scone will be light and crumbly, and too much milk will weigh it down and prevent it from rising. Only use enough milk to make the dough sticky yet workable.
Don’t knead the dough too much
It’s very important that you do not knead the dough too much. Work the dough enough to smooth it, and then roll it out to the desired thickness. Over-kneading the dough will make your scones tough instead of light and tender like Starbucks makes them.

These are the best blueberry scones that I’ve ever made.
