What You Need to Make El Pollo Loco Cilantro Dressing

  • 1 bunch cilantro, chopped
  • 1 cup mayonnaise
  • 1 teaspoon cumin
  • 2 1/2 Tablespoons lime juice
  • 2 Tablespoons minced garlic
  • 1 teaspoon sugar
  • 1/2 teaspoon onion powder
  • 1 jalapeno, seeds removed and chopped
  • salt and pepper, to taste
  • whole milk, to thin (optional)

  1. Into a high-speed blender or food processor, add the cilantro, 1 cup of mayonnaise, cumin, lime juice, garlic, sugar, onion powder, jalapeno, salt, and black pepper. Blend until smooth. You can add milk (1 Tablespoon at a time) if you want to thin out the dressing. Blend until it reaches your preferred consistency.
  2. Pour the dressing into an airtight container and refrigerate until ready to use. The flavors will actually improve overnight. ENJOY!
